I spoke with a company called Fastback Creative Books at the Photoshop
Expo last week.  They make a binding system for small-scale runs of
books.  The results look great, it may even be the same system that
you're describing above.

The really cool thing though, was getting to meet Camille Seaman, who
works w/ Fastback and provides services that range from "will
design/print/bind your books for you" to "will stick your pile of
pages into a cover" and everything in between.
