Printing B&W with just the black ink.  It allows you to leave the color ink
in the printer.  Incredibly, Epson UltraChrome printers do not, however, use
the light black in "black only" printing.  The look of the print with only
black ink is sometimes referred to as a "Tri X" (grainy) look.  

The black ink is warm, but the MIS Eboni is less warm than Epson Matte
Black.  There are some papers that print cold and some that print warm, so
you do have some control over the hue of the image, but it is limited
relative to one of the variable-tone inksets.

I have just used the Photoshop curves to control the inks.  They are open (&
free) and can be manipulated by users.  The pre-made curves cover some
popular papers, and many papers are close to those already profiled.  You'll
be surprised at how similar especially matte papers are.  We're not dealing
with high-gamut color inks here.  The UT2 & UT7 curves are also easier to
manipulate than the older ones.
