many years ago I shot some 5 x 4 copies of paintings for a woman that was going from shop to shop in the Rocks, a busy tourist area in Sydney. She had her cards printed was doing exactly what you are proposing and doing quite well at it. She'd been building up her client base for a while, but was making a go of it. I do't know if the concept of single Inkjet output cards would be profitable in the begining, but it may allow you to determine the most popular cards to begin with, then have them comercially printed in sufficient quantities to make it economically feasible.
