I took John Paul Caponigro's Photoshop Master Class last summer (not a printing workshop) and it was excellent, as were the facilities and staff.
They have listed a few printing workshops.

  Do any of you have recommendations for digital printing workshops? 
  I would consider myself an advanced beginner since I know PhotoShop  
  and some of the other related tools and software reasonably well. I 
  am the type of person who needs to sit in a class and do. Books work 
  well as a reference for me but I find I can't motivate myself to 
  learn that way.

  Any leads on weeklong workshops that would allow me immerse myself in 
  digital printing techniques would be appreciated.
