You use 1 curve by setting the blend to 100% to use just the left curve
(curve 1) or 0% to use just the right curve (curve 2). 

As to getting a tone you like, you just have to experiment. I'm happy with
the 50% blend of EMM_2200-cool and EMM_2200-coolSe on Enhanced Matte paper.
