I've been using Piezography for several years and also recently tried a black-only print on my Epson 4000. I was blown away with the quality. It didn't look exactly like a Piezo print but with a little adjustment here and there it looked terrific. I was printing on Moab Entrada Bright White with a small gamut profile. This is certainly a viable option and you can introduce other colors into the image without having to change inksets.
