I convert vs apply because the Win version requires me to save the file before exporting it to QTR. It is my understanding that QTR-Gray Matte and Photo Paper are profiles. The purpose is to give you a realistic preview of the luminance of your QTR print. If you click View/Proof Setup/Custom and then select the appropriate profile, you will have a good preview throughout the editing process.
