If I understand you correctly, and you are printing Black Only (BO), then there is no need to create custom ICC profiles. You'll get whatever the color is of your black ink. If that is your intent, you could print a 21 step grayscale on your chosen paper, then create a curve adjustment layer in Photoshop so the tonal range of your display matches your print. There are other ways to do this too.
