Digital BW, The Print

I would absolutely shoot in color then convert to B&W.

 

There are several methods available, ranging from simple desaturation to
using the channel mixer to copying each channel into a separate layer then
masking them and "painting" your B&W filters in place. This last method (not
mine, came from John Caponigro) gives the most control. The method
effectively allows you to place filters on your camera (as you would for
shooting in B&W), but the color and density of the "filters" you apply are
infinitely variable. So, for example, say you shot a tree with a dramatic
sky behind it. If you were shooting in B&W, you would probably opt for a
yellow or orange filter to darken the sky. However, this will also lighten
the greens in the tree. Using the method I'm talking about, you can
effectively apply an orange filter to the sky only, and possibly a green
filter to the tree, actually darkening the foliage.

I've done it and it works great! Only don't use greyscale. Use the  
channel mixer!
