Raw captures what the sensor sees. Set your ISO in the camera, set aperture and shutter. Shoot raw. Then do everything else in photoshop, a la traditional photography. OR Shoot jpg and let the camera make all the decisions (I will admit this a huge generalisation, but it still sticks to an extend with a dSLR).
