Digital BW, The Print

Hello all. I have a nearly new Epson Stylus Pro 5500 printer. Right now 
it has the original archival color ink set in it(ugh!). I was thinking 
of converting it to a B&W only inkset with matt papers but can't find 
much information on this. MIS and Cone products seem to side step this 
printer. Why? Has anyone made this conversion with this printer? What 
ink, carts, workflow did you use? How were the results? Any information 
is appreciated.
