It's just a matter of history, and it doesn't seem to make a lot of difference in the quad printing. One of the main differences seems to be the way the grayscale shadow values are mapped to the RGB values. sRGB compressed the shadows a bit, Adobe RGB (the one I'd go with if I was starting over) is more straight-line.
