I'm a huge fan of Convert to B&W Pro... I move up the contrast slider to where the preview image kind of snaps too contrasty, and then back it down a bit. Usually ends up being somewhere between 3.5 and 4.2 But I'm really into high contrast, so that still may be too much for some. Anyway, below are some pix of mine, most using Convert to B&W Pro. I still use the Gradient Map method from time to time...
