Scott,

This is not a direct answer to your question, but you might be interested to try BW 
conversions on RAW files from within Adobe Camera RAW.  In his book "Real World Camera 
RAW", Bruce Frasier attributes a RAW BW conversion technique to Russell Brown that's 
more sophisticated than just desaturating.  I'll put the "orange" filter technique in this 
post.  He also lists "deep red", "blue", and "green" filter settings.

Set the saturation to -100
Go to the calibration tab, and then set the following:
shadow tint 0
red hue +100
red saturation -23
green hue -100
green saturation +100
blue hue -35
blue saturation +18

for "deep red", use the following:
shadow tint -4
red hue +100
red saturation -100
green hue +100
green saturation +100
blue hue -99
blue saturation +3


You can tweek from there.
