Richard, You mention CMYK, but if you are using an Epson driver without a RIP, you only need go to RGB. The Epson driver takes the RGB (which it thinks is real color information) and separates it internally into CMYK. The reason to convert grayscale to RGB is to control how the grayscale will eventually separate into the 4 inks. If some of these inks are tinted (see Paul Roark's methods), you also control monochrome tints for different tonal areas. Does that help?
