Arlene,

It's been a while since I ran UT7 and PS 7.  (I actually have but never
liked PS 7.)

To the extent possible, follow the settings in

Be sure the driver in your new computer is the official Epson one and not
one that shipped with the computer or OS.  I'd probably go to Epson and
download the latest.

In PS, click on Edit, then Color Settings.  Be sure the RGB Working space is
set to Adobe RGB (1998) and the Gray working space is at Gray Gamma 2.2.  I
believe those are the most important.  Start with the defaults of a common
top setting, then just change the settings above.  

You might in the Print Preview that no profile is being loaded.  On the
latest the color management is at No Color Management.  I think earlier ones
used Same as Source.

The driver settings should be as stated in the Readme file, above.
