Kevin: I don't know why you can't choose VFA. I don't use any profiles. In Photoshop in the print with preview screen I use "let printer determine colors" and then control the printing with the Advanced B/W driver. You are already using matte black. That should make all of the matte papers available. You may have to contact Epson on this one.
