Ok, I think I see what's happening. I think it's because you're going in via the Preview window. I have that too (Crtl+Alt+P). But Ctrl+P (whatever that is on a Mac) goes straight into the driver window. I don't often use the Preview window, but haven't had any problems when I do. Try this: go into the driver first, set everything up, then save it as a custom setting, then print some small something. That will set up the printer/driver with those values. Then, when you go into the Preview window it will be already pre-set and maybe it won't revert. Something like that ought to work.
