I think the answer is simply that there is only a limited number of sensor manufacturers and they choose to use RGBG! Canon have used CMYG filters (NOT CMY - a K filter would just be an ND!) in cameras like the Pro 70 and earlier compacts, and they have had very good quality for their class. I think Kodak have also used CMYG in the past, although not currently AFAIK.
