It's what patent law is all about; you craft an invention and spend the time and money to patent it, you get protection in return. Further, if a patent holder doesn't vigorously defend their patent claim, this can be used to invalidate the patent. That's likely why Epson goes to the expense to litigate on infringement that is likely inconsequential to their business - if they don't do this, then HP or some Chinese knock-off could infringe and then win in court, which would have a huge impact on Epson's business.
