The Software Update control panel is only for the Macintosh OS - so it will
not update any third party drivers. Though OS X has some built-in Epson
Drivers I don't think they support the 1160 and you are still running OS 9.

It's a good chance you still have the latest drivers as the last driver
update was some time ago - almost two years.

I have both the 1160 (VM) and 1200 (Generations) - so there could be some
overlap with the extensions with me. There is an Epson folder inside the
Extensions folder that has Epson libraries and other extensions and some
loose Epson extensions floating around in the Extensions folder.

I'd just reinstall the latest drivers and don't worry about it. Though some
might say don't fix something that ain't broke.
