Digital BW, The Print

I'm a little confused about the set up of my epson 1400..I'm running 
Gimp on ubuntu 10.4. and printing via Gutenprint, I print black and 
white prints, by setting the output to grayscale, There are only two 
options in the output, greyscale and colour,. when printing BxW, there 
is a very small usage of the colour cartridges, { 4 black cartridges to 
1 set of colour]

What as confused me is the talk of Black only printing, as I can find no 
option in the printer program to set it up? is this setting of grayscale 
the BO option? or am I missing something?
