Mark,

To accomplish what you want I suggest you have some custom profiles made for
the papers you want to use. While you may be getting good color with the
default Epson color management, it may not be good enough for making
monochrome prints which are close to neutral. Most of the people printing
B&W with color ink sets seem to recommend profiles as the only way to
overcome the problems you describe

I agree with Martin, the custom profiles are the best place to start-
 a properly profiled paper will render a decent sepia print just as 
though it were a full color print, by and large. The least expensive 
software for that is probably Monaco Ezcolor, though it's not the 
most powerful. Short of that- if you start with a duo-tri-quadtone 
in PS, CONVERT IT TO RGB befor you print it. Is very difficult to 
fine-tune the color by going back and 'specifying a different ink 
shade'. In RGB OTOH, you can use an adjustment layer to get rid of a 
global color cast. Or, if you have a green or blue shift in a 
specific part of the tonal range, try this: a)zoom in on the area 
that most clearly displays the color shift  B)open a curves 
adjustment dialogue box, and set it for the color most likely to fix 
the problem e.g., if you have green crossover, you could use either 
the green curve or the red curve, if you have blue then use the 
blue. Place your cursor on the most obvious of-color area on the 
image, and do a 'ctrl-click' (or Mac equivalent) on that spot. That 
gives you a control point on the curve. Set a few more points on 
either side so that the whole curve doesn't move, and then adjust 
the first point up or down to get rid of the crossover.

Make a color adjustment layer in photoshop, and choose about 25 yellow
and 10 red. This will make a very nice sepia color.  If it isn't exactly
what you want, just keep on fiddling with those two colors until you get
the shade you want. (With color inks)
