Kiefer,
I had the same problem recently. Selecting "user defined" always
gives a slightly bigger box on the screen (although I too
experienced some of the funky sizes you explained a couple of
times). I'm guessing this is because they pad the dimensions
assuming borders. Anyway, the way I solved this was:
1) Import photo, right-click on the photo and select "center region".
2) Select "file->print" from ImagePrint. The "print dialog" box
pops up. Click on "options", and for the The Epson 2200 their are
two options, "borderless" and "center margins". Select both (If you
then click on "apply" these should stay as the defaults, so you
don't have to repeat this step for subsequent prints).
This seems to do the trick for me, and I get perfectly centered
prints on all papers (4x6, 5x7, 8.5 x 11) I use.
Also, maybe try "user-defined" for your 8.75 x 11.75, and then save
it if this works. I just tried this and my frame size was about 9 x
12, which seems about right, since it is slightly bigger than the
input values (consistent with the slightly larger frame-size for all
other defined sizes).
