On the A100CGK, what is the shape of the velocity output? Is it a
gate whose level depends on how hard a key is pressed? Or does it
actually output something like an attack phase of an envelope? If it
does an attack phase, then what comes next, sustain, or drop to zero?

as far as I understand the description it is simply a dedicated constant
voltage which represents the velocity value of the last note-on. Same as
possible with CV2 out of the A190.
