I found that unless we can get to near zero latency the only way I can record overdubs is not to monitor through logic. I use my trusty old outboard mixer and split all signals before the converters so I can monitor in real time and leave plugin delay on. Someday maybe I can get apogee symphony cards and do without it but not today Im afraid. This also allows me to sing through my trusty outboard reverbs etc. I also have UAD plugs, they are great.
