Yes that will work - and is/was a part of logic for many years. hitting 
a midi key though might have latency and you might be off by 20ms, and 
its just hard to get it totally right. but get it a try.

I'm using Logic 8.

There is no 'flextime' or 'beat matching' in 8 but there IS 'tap tempo'!

Page 652 of the main manual shows how to create a tempo map by tapping 
on a MIDI instrument.  If I stop tapping it keeps going at the last 
tempo.

Looks like it should work.
