I just saw an article on this in one of the British magazines (here in California where we get them a few months late). One thing about strumming, which I never realized even though I had played guitar in bands, is that we compensate for the time it takes to complete a big strum, so we might start the strum 1/16 before the next bar begins, and time it so the final string is hit on the beat. Of course there is a "staircase" look to the midi notes, and it seems the note starts are not evenly spaced but rather there is an acceleraton, where the notes get closer and closer as you get close to a beat.

Midi works well for a big strum, arpegios, repeating riffs, and even leads (although those take some careful programming).

Fast strumming (like Mrs. Robinson or Pinball Wizzard) is pretty much out of the question for midi simulations.

In addition to muting strings, you can pick the strings in different ways (turning the pick), and different places on the string (close to the bridge or the neck), plus there might be some string resonances (I was reading about this being a factor for piano samples so I think it applies to guitars even more).

I have a midi guitar interface, and I used to use it to capture real guitar playing, but there's a lot of erroneous notes and slight delay.
