Apple Logic Pro /LogicExpress Discussion

Hey guys,

    If I import, say a classical piece and want to create a tempo map in Logic.  How can I do 
that?
    
   Is there a way I can tap along with the quarter notes in the piece and have them recorded 
as tempo changes??

    Much appreciated!   I couldn't find the answer to this in the manual.
