Paul, In your original post only the RGB profiles show up in the list. The Gray_Matte_Paper.icc and Gray_Photo_Paper.icc won't show up because their space is gray. If you find the .icc files in Finder and open them with ColorSync, you'll see what I'm talking about. Those, and any other profiles that aren't tagged as RGB profiles will not show when printing in Photoshop. Hence, you can use the Wide Gamut RGB profile as it's built using a gamma of 2.2 just like the gray profiles you're looking for. You can also use the QTR-Print-Tool to use the profiles Photoshop won't list as it doesn't place restrictions on the profiles as the Adobe applications do.
