The middle dilutions -- LC and M -- are the warmest.

I'm experimenting with Eboni6 and Epson Hot Press Natural and it's amazing

Yes, it's a great combination for those who want a 100% carbon pigment
image, a non-brightened paper, a rather neutral image, and very good dmax.

For some reason they look much warmer after varnishing,

The more "stuff" that is against the edge of the particles or dots, whether
in the base or applied later, the warmer the carbon seems to become.

Also, what are the warmest matt papers currently available?

I assume you mean which papers cause the image to be or appear the warmest.
Some of the warmest papers in terms of their paper base are the Epson HP
natural and Hahnemuhle bamboo, both of which have relatively neutral carbon
pigment images in that the rise in Lab B is limited.

While the Epson HPn rise in Lab B is about 1.5 units, many papers will give
you a 4 unit rise. H. Photo Rag and Red River Aurora are among them.

To get a warmer appearance you can go with a more heavily brightened paper
that leads to a greater difference between the paper base (highlights) and
warmest tone on the paper. With Red River Polar matte, for example, you
can get a Lab B rise of 7 with this approach.
