You have limited yourself to the 2 brands that seem to have the most fans. I use UT2. I have used Piezography products in the past and liked them as well. The advantage of the UT system is that it is toneable. You can print tones from sepia to cool on any paper. Also, as you stated, UT system can be used on glossy or matt. I have not used the K7 system, so can't really comment, but some rave about the tonal smoothness. The only available ink in supposed to be neutral, so you change tones by changing paper. It all comes down to your priorites in print making. One atvantage of a smaller printer is that you can try different ink sets for a fairly small investment. If you have access to a samller printer ( I use a 1280) you could try each set.
