I've done a bit of this, with no particular problems.
The steps you list should suffice at least to get going.
You might run in to issues with +5 versus +10 volt trigger or gate levels, possible dc offsets or shifts to waveforms, etc., but nothing that a Dual Processor and/or attenuator can't handle. Can't think of anything I've wanted to do that was intractable.
I actually cannibalized a bunch of 1/8" and banana cables to hybridize them -- now I've got a set of cables that are banana at one end and 1/8" at the other. Works great!
