Akai S1000 / S1100 samplers

Hello,
I was sequencing my Akai with Logic before but I just purchased an Alesis MMT-8 along with 
an Evolution MIDI keyboard and I'm trying to figure out how to control stuff like filters with 
the knobs on the MIDI controller. There are eight knobs and I'd like to be able to assign them 
to different functions, like if I want to change one samples pitch on the fly or filter in a 
sample. Thanks!
