You do have to assign a knob to perform the function of another aux -
so you lose two auxes. Actually that tip was provided by Tom Adam as I
totally forgot to include one when knocking up the guide*.

Hehe, yeah, been there myself. I have actually simplified my entire
music-making setup, dropping the Nord modular and many of my more
complex synths. I actually find the P3 really simple and fast now - I
can even assign auxes during a performance without fear - but it did
take me a while to learn it thoroughly enough to do this.
Stick with it, it's worth the effort. And there *will* be a tutorial
video that may help with some of the deeper stuff.
