The CV breakout pipe will be much faster than a normal MIDI driven CV
convertor.
MIDI runs at 31.25 kHz.
The breakout box will most likely run at 10MHz, and at least 1MHz.
1MHz is already 32 times faster than MIDI.
MIDI doesn't really limit resolution - you can combine CCs to 14-bits or use
NRPN/Sysex messages if you want to send 16 bit values.
On serial MIDI, that sort of thing adds latency, but on a high speed link
it's not an issue.

I'm not sure what you mean exactly about transmit all channels + clock.
Each output can be configured to send MIDI clock independently.
Each track is configured to send data to a certain MIDI out port and channel
(though that can be over-ridden by an aux event).
The 5 serial MIDI outs and the basic CV/gate outputs or the CV/gate breakout
box will all appear as standard output ports.
In the case of the basic CV/gate outputs, this port is really a software
pipe to some MIDI to CV conversion code.
A configuration page will let you set up the channel assignment, voltage
scaling, retrigger and slide options etc. for each output.
