They're not beige to my eyes. The official name is parchment white.
Black with white text was an option for engraved infilled keys, but the font
on those was going to be a substitute.
To get the exact font chosen on the white keys, they're using a laser, which
I don't think would work on black keys.
Black keys were decided against for the standard keys on grounds of poor
contrast, but if someone wants to pay for a one-off set of keycaps in black,
that's fine by me.
