I'm considering a p3. Problem is, I don't have any midi gear. Would I
lose any features by using a midi-cv/gate converter? How difficult
would it be to mod the p3 for cv/gate?

Also, how would I incorporate arpeggio into a p3 setup?

I only use one midi synth with my P3, the rest are monosynths driven by midi
to cv conversion.

I chose not to equip P3 with native CV conversion because it would add
unnecessary cost for midi only users, and because I find it more convenient
to use midi.
Imagine if you had 8 monosynths being driven from a P3, with 2 or 3
auxilliary CVs per channel. You could be looking at over 30 quarter inch
jacks on the rear panel...

Midi means much less cabling, and it allows you to simply do things like
layering two synths by setting their convertors to the same midi channel,
which would need at least a CV patchbay and multiples, and possibly even
buffer amps to do with CV & gate.

Some people might complain about midi timing, but that is something largely
caused by poor implementation of drivers and OS latency on PCs.
I am looking into an independent output mod for the P3 anyway, to allow the
four outputs on production P3s to be addressed separately, though it's not
certain this will be achiveable...

Not sure what you mean - do you have a hardware arpeggiator ?
