This is your problem. 
The Java editor just doesn't cover all the things the BCs can do. You
also can't program all the things that the BC's can do from the unit
itself.
Grab Mark's editor from the files section. 
It is for the Windows PC, but you should be able to get it going under
the Mac OS with a Windows emulator.

For you above example....
Follow Mark's instructions to set it up and it should detect the Units
connected.

Highlight the BC unit you want to program (you may only have one) and
press the 'P' (Preset) toolbar button.
On the next dialog that pops up press the <-> black and red dash
button to bring up the Buttons page
Highlight the button you are interested in and click the 'E' (edit) on
the toolbar of the button dialog that has just popped up.

Set 'Type' to the Midi message you want either using the 'Standard
output' or if you need sysex or multiple messages select 'Custom output'
Fill in the values that will appear, depending what 'Type' you select.
Lets say you select "Control Change'
Set the Channel and Controller number
Set 'value 1' to 0 (Min) and 'Value 2' to 4 (max) and  'Mode' to
"Increment" and 'Increment knob' to 1
Press OK and you are done for that button.
Send it to the BC
