In most cases the BC can control most synths with sysex

Check the back of the manual for System Exclusive (sysex) info, that is usually where it is located.

The BC can output up to 125 bytes of any Midi data per control.
The values it can use are 0 to 16,383 in 2 byte Midi form. 
So yes it will output 0 to 128  as a single data byte.

I use one of the encoders to go though all the banks (User 1 & 2 Internal A to I) and presets on my FantomX

I don't have a Triton so I may have misunderstood what you mean by 'banks'.

As far as the display is concerned, no. 
The display will only show the values of the Button/Encoder when it is changed.
