No, this would not create a cross-simulation of one device on the other, it would just show the wrong color on screen. It would be possible to emulate output to the projector with Photoshop's softproofing functions, but its not practical, as projection is a very relative thing, where the eye is adapted to the projection conditions, so if the softproof showed your whitepoint as being, say, pink, that would be literally true, but not effectively true, since the eye would adapt, and make that pink wall white again. So I would not recommend attempting to correct for a projector, its an inferior display, and simply using the profile for it is about as good as its going to get... C.
