Keep in mind that the R1800 builds its grays ENTIRELY from full colored inks, putting it in a tougher position than even the older Epson's that have light color inks, and perhaps a dark gray as well. So the R800 and R1800 won't really produce gallery quality B&W with OEM inks under any circumstances, as all that color in the mix makes them shift tone quite significantly with different light sources.
For serious B&W with the R800/R1800 you should consider an ICC-capable tinted gray inkset. I'd suggest you give that category a while though, as the options may improve in the near future.
