Dan, Like you, I never had any success trying to get Garage Band playing the piano directly, despite altering Audio-Out in the Preferences for GB & the Sound panel of my computer preferences. At first glance GB does not normally support export of midi, but I did find a work-around for you to save and export any midis created in GB: After creating the midi you want in GB, you can Export it using and play it thru your usual player.
