This is hard to explain; especially since different
models are distributed all over the world, and often "newer" versions still have
the same model number! The U1 upright is a good example of a piano that
has changed many times in different markets over the years, but still carries
the model number of U1.
I can only speak for the G, C, and S models I have
seen in the United States. Years ago, Yamaha made a G series of grand
pianos that were marketed for home use. That means they were engineered
and manufactured to a price point not necessarily the best quality. The C
series are better pianos and higher priced; called Conservatory models.
Then, there is the best they can do, and those are the S series for those who
are willing to pay for a fabulous piano. I once saw an A series baby grand
that was wonderful, but it was not marketed in the U.S. It's all
about price point and what the customer will pay for.
As everything else in the world, piano
manufacturers had to compete in a market where people wanted to buy goods for
cheap, so they had to come up with pianos that people could buy for
cheaper. The only way to do that is to cut corners somewhere. You
get what you pay for, but that is hard to explain that to someone on a showroom
floor looking at virtually identical grand pianos the same size but the price
points are thousands of dollars apart.
I believe the C3 today is similar to the G3 of
yesteryear, but there is no cheaper version of that size piano today. The
cheaper models are the smaller grands.
The older G series have the same stringing scales
in some instances that the C series now uses but other differences in the piano
actions. You really cannot generalize and say the old G series are as good
as today's C series.
Today's G series make a lot of compromises in the
materials used in the case, how long the factory takes to produce them, how nice
the piano hammers sound (usually brighter), how well the piano can be tuned and
how long a tuning will last, how fast the materials in the piano action will
wear out, and how long the regulation of the piano action will
last.

In pianos, bigger is usually better. The C2 is a well-built piano. The GC1
is a cheaper version of the C1. Different materials in the case, piano
hammers and the amount of work put into it at the factory. That is why it
is so much cheaper. Try to get a good deal on the C2. Ultimately though,
you should listen to each of these pianos and decide for yourself!
