Would anyone know how to initiate, ie, what buttons to press, to begin keydrive calibration on the DKC-800?

You need to get a service manual or ask Yamaha.

Since Im in US, I can get the service manual at Yamaha corporate office in Buena Park.

Although an E3 should be in good shape, you need to make sure that the regulation is up to scratch before you try re-calibrating any model of Disklavier. The electronics can only adjust themselves to the physical state of an action, so a piano which is worn out or badly regulated on the piano side will never work well on the electronic side.

Thank you athomik.  Excellent advice and something to always remember whatever disklavier model we're all trying to calibrate.

OK group!  After many many months, I've found the procedure to calibrate the DKC-800. The service menu has lots of other good stuff in it.  For example, it has an odometer for each key, among others.  
Please remember what athomik said.  Make sure first that the piano regulation is up to snuff, the action is at its best, before proceeding with re-calibration. 
So, DKC-800 E3 model owners, here it is:
While system is OFF, press simultaneously RECORD and SELECT buttons on the controller unit, and while pressed, you will press the POWER button and wait for the "Disklavier Service Center - Please Wait message".  When you see this message, let go of all the buttons.  Wait a few moments until you see the first page of the menu.  You're ready to go.
