the MPC does not work like that. the mpc slider set to pitch is for modifying pad samples, not MIDI messages. all pads can have just one MIDI note assigned to them, and the default midi note mapping is pretty out there (not quite sure what they were thinking with that, actually..) so if you want to play via mpc only, you'll want to spend time making up pad maps (kits) for playing in different keys and registers... if you can swing it I'd recommend adding a basic MIDI keyboard to your setup - at least for writing.
