Hello again, everyone.

I'm working through my E-max manual and messing with the rack unit, so I'm 
trying to avoid asking dumb or RTFM questions on here, but here's one I 
haven't seen addressed: is there any way to hear the souce that i'm sampling, 
through the e-max, while I'm actually sampling it?

Sure, I get to see and adjust the little meter on the LCD, but for "force" 
sampling, I need to be able to hear my source so I can hit the button on the 
e-max at the exact moment to start it sampling. So far, I haven't found any 
way to "turn it on" so that I can do that.

Am I just missing something, or is this not possible?

No, it´s in fact not possible. Hearing the source trough the sampler
was first introduced in a later software version for E III XP. On all 
samplers prior to that you cannot monitor your sampling source trough 
samplers A/D - D/A. Regs Rascal

No, but the only thing I can suggest is to monitor the source that you're 
sampling with a mixer while you're sampling it.

Move to quarantaine

This moves the raw source file on disk only. The archive index is not changed automatically, so you still need to run a manual refresh afterward.
