This is just a guess, but I bet the reason they suggest not booting from removable media is that if they said it was ok, there would probably be a bunch of people calling tech support asking why their EMAX won't start up.  I think with the EMAXII, you can only change boot options after booting, so if you lost your Zip drive, you wouldn't be able to switch SCSI boot # back to your other drives?  SOrry, I'm at work so I don't have my manual handy....

I've always thought the reason was because when the Emax II came 
out the choice in removable media was basically small syquest cart 
(44Mb) with slow access time that took a while to spin up so the 
usually wouldn't be ready or fast enough to boot from. You have to 
remeber whatever the Emax boots from is where it always expects to 
find the OS which you need to access any functions. Even if the drive 
fails the Emax II will look down the SCSI chain trying to find something 
to boot from. So with my Emax II it would look at the Syquest drive on 
#2, if that failed after 15 seconds it would look through #3-8 before 
going back around to #1 and finding my hard drive (before it gave out).

I personally use a Syquest EZ135, with a 13 ms access time it's as 
fast if not faster than old hard drives that work in the Emax and twice 
as fast as the Zip. It also does not suffer from clicks of death 3 years 
and no data lost yet (knock wood). You can still get them on E-bay for 
cheap, I saw one recently go for $37.50 and that was with 5 - 135Mb 
cartridges. Well worth it.
