There isn't. Apparently that's because Logic is assuming it's users aren't
clever enough to know what they're doing, so it would just keep the samples
in case they're used in another patch as well.
Oh no, that's no good excuse, I know.

Anyways, a workaround would be to load the instrument you'd like to delete,
open the EXS editor and do a "move audiofiles". I don't know whether this is
working now, I am still on LAW 5.5.1 and this function NEVER WORKED
(unbelievable but true!) in any 5.x version (I am sorry to say so, but it's
just superlame that they weren't able to fix this, especially since it was
working perfectly in 4.x). Perhaps they got this function back to work in
Logic 6/Pro, then you could just move your samples to a significant folder
and delete the folder after the instrument is deleted.

Btw, another pretty silly thing: One would think that in case you'd want to
delete an instrument, you'd first load it to have a listen. Well, as soon as
you have the instrument loaded you can't delete it anymore, so you need to
unload it and then select it again (either in Finder/Explorer or in the EXS
editor), to delete it. Not exactly too clever either...

This moves the raw source file on disk only. The archive index is not changed automatically, so you still need to run a manual refresh afterward.
