EXS 24 Logic Sampler Users Group

I am about to spend thousands on upgrading my system, so I need 
answers...

Can you play the EXS24 live?  I mean, if a concert pianist sits down 
and is playing a sampled piano on a weighted midi controller 
keyboard, and the samples are loaded in and playing from the EXS24, 
then will there be a noticable latency that will annoy the pianist???

I have a feeling that it has to do with the latency of the particular 
audio hardware, and not the EXS24 software sampler.  So, can anyone 
point me to a list of all the latency figures for various audio 
hardware/driver combinations????  One I am very interested in is the 
MOTU 2408.
